Set in the side of a mountain, inside caves that were built to store and produce wine 400 years ago, this is the luxurious Canaves Oia Suites in Santorini.

Based on the 'Island Of Love', in the beautiful town of Oia, the interior of the property, which has 24 luxurious suites, can be revealed following an extensive refurbishment.

Boasting a white-washed design, and breathtaking panorama of the caldera and crystal-clear Aegean Sea, the five-star resort, which dates back to the 17th century, mixes contemporary style with Greek architecture.

Named as one of the top 25 most luxurious hotels in Greece, the family-run Canaves Oia Suites, in the north west of the island, ooze extravagance, in a jaw-droppingly stunning setting.

 

From the glorious honeymoon suite featuring a rootop L-shaped infinity pool and Jacuzzi, to Superior rooms with cliff-edge plunge pools and spacious bedrooms, all accommodation offers staggering views.

My Junior Suite, which pays homage to its original shape, is a vast white cavern with nods to the traditional Greek design but with a minimalist interior.

It has a king-size bed, separate lounge area, bathroom, and patio area proffering incredible vistas. The price for one night – including breakfast, a buffet of delights, including Greek meats and cheeses, as well as fresh fruits and cakes – is £360.

The location is idyllic; it's so perfect, it's looks as though it's been Photoshopped - with vibrantly bright-coloured flora and fauna dotted around.

Guests can while away the sunshine-filled days soaking up the rays by - or in - the swimming pool while sipping cocktails overlooking the too-blue waters of the caldera. 

The pool is next to the restaurant run by executive chef Andreas Evangelatos, offering delectable dishes inspired by the scrumptious Mediterranean cuisine and the local Santorinian specialties – along with fine wines.

For couples in search of the ultimate romantic meal, there's Petra – an exclusive restaurant with just three tables, where diners can feast on delicious foods while under the stars.

And for those who want to find their sea legs, the resort can arrange private yachting on board a 69ft-long motor yacht, or a spin on its four-seater speed boat.

I arrange a day on its 50ft Catamaran Lagoon 500, which is a public trip, taking in Palaia Kameni island's sulphur-infused hot springs; swim stops; and an on-board BBQ.

The manager of the chic hotel revealed it was his parents who first started the business in 1985.

He told MailOnline Travel: 'They started with four suites, four canaves – cave houses that they used to make wine in the old days.

Carol stayed in Canaves Oia Suites in a Junior Suite which costs from £360 per night. EasyJet flies from London Gatwick to Santorini from £34.99 one way.

'They took these caves and modernised them into luxurious suites. 

'Most of the caves are 300 or 400 years old – made out of volcanic eruptions and geological errors!'

He revealed the hotel is popular with VIP guests – hinting at names that appear on the Forbes Rich List – although he wouldn't confirm who.

The first renovation took place in 2010, transforming the hotel into a modern, luxury resort, before the property was again modernised, with works finishing in time for this year's summer season.
He added: 'It's a nice combination between modern and old days.

'Rooms have been reconstructed to modern accommodation of highest standards. 

'The hotel now offers 19 suites with brand new Jacuzzis and plunge pools overlooking the amazing caldera and the volcano.'
